Ingredients

Caramelized onion dip

  • 2 extra-large onions, diced into small squares
  • 2 tbsp butter
  • Salt and pepper (amount not given)
  • 2 sprigs fresh thyme, leaves removed
  • 1 sprig fresh rosemary, finely chopped
  • 1 tbsp Dijon mustard, for cooking the onions
  • 1 tsp Worcestershire sauce
  • 1 tbsp maple syrup
  • 1 tbsp beef bouillon paste
  • About 1 cup water
  • 1/3 cup 5% Greek yogurt
  • 1/2 cup sour cream
  • 1 tbsp Dijon mustard, stirred in after the onions cool
  • Salt, pepper, and garlic powder, to taste (garlic powder amount not given)
  • Fresh chives, for garnish (amount not given)

Homemade tortilla chips

  • Organic or homemade tortillas (count not given)
  • Oil, for shallow frying (amount not given)
  • Salt (amount not given)

Method

  1. Add the diced onions and butter to a pot and season with salt and pepper. Cook over low heat for about 15 minutes.
  2. Add the thyme, rosemary, 1 tablespoon Dijon, Worcestershire sauce, and maple syrup. Mix and keep cooking on low for another 10 minutes, until the onions are soft and translucent.
  3. Add the beef bouillon paste and about 1 cup of water. Keep cooking over low heat until the onions are very soft and almost all of the liquid has cooked off. The post wants a jammy consistency, not a liquid one. That stretch of time is not stated.
  4. Let the onions cool slightly. Combine them with the Greek yogurt and sour cream. The post uses 5% Greek yogurt so the higher fat helps keep the dip from curdling. Mix in another tablespoon of Dijon. Season with salt, pepper, and garlic powder to taste.
  5. Transfer to an oven-safe baking dish. Bake at 350°F for about 20 minutes, until hot and bubbling. Broil at the end if needed for a golden top. Broil time is not stated.
  6. Finish with fresh chives.
  7. For the chips, cut the tortillas into triangles. Shallow fry in a hot pan for a couple of minutes per side, until golden brown. They keep crisping after they leave the oil, so do not take them too far. Move them to a paper towel and salt them while warm.
  8. Serve the chips with the dip.

Notes

  • Servings are not stated.
  • A single total time is not stated. The onions cook 15 minutes, then 10 minutes, then until jammy, then the dip bakes about 20 minutes. The jammy stage and the broil have no time.
  • Water is written as about 1 cup. Garlic powder, chives, tortilla count, frying oil, and chip salt have no amounts. Onion variety is not named beyond extra-large.
  • Family food check: Worcestershire sauce contains anchovy. No shellfish, oyster sauce, shrimp paste, or fish sauce. No green bell peppers. No fish beyond the anchovy in the Worcestershire sauce.
