Ingredients
- 1 pound ground beef
- 1 small red onion, chopped
- 1 can (15-1/4 ounces) whole kernel corn, drained
- 10 corn tortillas (6 inches), cut into 1-inch pieces
- 1 bottle (8 ounces) taco sauce
- 1-1/4 cups shredded cheddar cheese, divided
- Hot pepper sauce, optional
- Sour cream, chopped green onion, chopped tomatoes, cilantro, salsa, for topping
Method
- In a large skillet over medium heat, cook the beef and onions until the meat is no longer pink. Drain to remove excess fat and water. Editor's Tip: Believe it or not, there's a wrong way to brown ground beef. Here's how to cook and brown ground beef the right way.
- To the beef mixture, add the corn, tortilla pieces, taco sauce and 1 cup cheese. Continue to cook until bubbly and heated through.
- To serve, sprinkle with the remaining cheese, a drizzle of hot sauce if desired, and any other toppings. Enjoy!
