  • 1/4 cup panko
  • 1/2 cup parmesan
  • 1/4 cup milk
  • 1 egg
  • 1 tbsp parsley
  • 1 tbsp dried onion
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 tsp vegetable seasoning
  • 1 tsp salt

Sauce and Orzo

  • 2 tbsp olive oil, divided
  • 1 onion, finely diced
  • 4 cloves garlic, minced
  • 1 cup orzo
  • 2 cups broth
  • 1/3 cup cream
  • 1/4 cup parmesan
  • 1/2 tsp salt
  • 1/4 tsp pepper

Method

  1. Mix all the meatball ingredients in a large bowl. Scoop into meatballs.
  2. Heat 1 tbsp oil in a large saucepan over medium. Brown the meatballs. Move to a plate and cover.
  3. Add the rest of the oil and the onion to the pan. Cook until translucent. Add the orzo and toast, stirring, until browned, about 2 minutes.
  4. Add the garlic, then the broth, cream, parmesan, salt and pepper. Put the meatballs back in, cover and simmer on medium-low about 10 minutes.
  5. Let it sit a few minutes to thicken.
