Ingredients

Steak

  • 2 lbs ribeye or sirloin steak, cubed
  • 1 tbsp neutral oil
  • 2 tsp Worcestershire sauce
  • 2 tsp garlic powder
  • 2 tsp buttery steakhouse seasoning (Kinder's)
  • 1 tsp kosher salt, or to taste
  • 1/2 tsp black pepper
  • 2 tbsp garlic & herb butter (Kerrygold)

Chimichurri

  • 1 bunch fresh Italian parsley, finely chopped (about 1 packed cup)
  • 2 Fresno chiles, finely diced
  • 4 garlic cloves, minced
  • 2 tbsp red wine vinegar
  • 3/4 cup extra virgin olive oil
  • 2 tsp dried oregano
  • 1 tsp kosher salt
  • 1 tsp red chili flakes
  • Juice of 1/2 lemon (optional)

Garlic Parmesan Mashed Potatoes

  • 6 medium Yukon Gold potatoes, peeled and quartered (about 2 1/2 to 3 lbs)
  • 2 cups half-and-half, used as needed
  • 4 garlic cloves, lightly smashed
  • 2 bay leaves
  • 3 to 4 sprigs fresh thyme
  • 4 tbsp (1/2 stick) garlic & herb butter (Kerrygold)
  • 1/3 cup sour cream
  • 3/4 cup grated Parmesan
  • 2 tsp garlic powder
  • 1 1/2 tsp kosher salt, plus more for the potato water
  • 1/2 tsp freshly cracked black pepper

Method

  1. Potatoes: boil the potatoes in heavily salted water until fork tender.
  2. While they cook, simmer the half-and-half with the smashed garlic, thyme, and bay leaves for 10 to 15 minutes. Remove the thyme and bay leaves.
  3. Drain the potatoes and mash. Mix in the butter, garlic powder, sour cream, Parmesan, and enough of the warm infused half-and-half to get them smooth and creamy. Season with the salt and pepper.
  4. Chimichurri: finely chop the parsley, Fresno chiles, and garlic. Stir in the olive oil, red wine vinegar, salt, red pepper flakes, and lemon juice if using. Let it sit while you cook the steak.
  5. Steak: pat the steak dry and season with the Worcestershire, garlic powder, steakhouse seasoning, salt, and pepper.
  6. Heat the oil in a cast iron skillet over medium-high heat. Sear the steak in batches, 1 to 2 minutes per side, until browned. Remove from the pan and set aside.
  7. Lower the heat, add the garlic butter to the same pan, and let it melt. Add the steak bites back and toss to coat.
  8. Serve the steak over the mashed potatoes with the chimichurri spooned on top.

Notes

  • The ingredient list is from the Instagram post (reposted by @eatinghealthytoday, credited to @thesapor). The steps are from The Sapor's own caption for the same recipe, quoted in reposts. Only the end of the last step was cut off, after "toss the steak." The serving step matches the photos.
  • Dried oregano is in the chimichurri ingredients, but the original steps don't say when to add it. Stir it in with the oil and vinegar.
  • The photos show it served with roasted broccolini. The post doesn't list it.
