Ingredients
- 1/2 cup all-purpose flour
- 1 large egg, lightly beaten
- 3/4 cup seasoned bread crumbs
- 3 tablespoons grated Parmesan cheese
- 2 boneless skinless chicken breast halves (5 ounces each)
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons olive oil
- 2 Italian rolls, split
- 2 slices provolone cheese
- 1/3 cup marinara or other meatless pasta sauce, warmed
Method
- Place the flour and egg in separate shallow bowls. In another bowl, toss the bread crumbs with the Parmesan cheese.
- Pound the chicken with a meat mallet so it reaches 1/2-inch thickness. Sprinkle it with salt and pepper. Dip the chicken in flour to coat both sides and shake off excess flour. Dip the chicken in the egg and then in the crumb mixture. Editor's Tip: Pounding the chicken is key to ensuring the chicken comes out tender, never tough. Ensure uniform thickness for best results.
- In a large skillet, heat the oil over medium heat. Add the chicken, and cook until golden brown and the chicken is no longer pink inside, about 4 to 5 minutes per side. Serve the chicken in rolls, topped with the provolone cheese and marinara sauce. Editor's Tip: Try toasting your bread before putting the sandwiches together. For even more flavor, toast it with garlic basil butter.
